How to Cut Cheeses

Parmigiano-knifeThe first rule is that every portion of cheese should contain some of the rind. This is because the taste of the cheese gets stronger the closer it is to the rind. Try to cut a cheese to allow all your guests to have an equal share of the inside and outside portions.

Tip: Avoid cutting cheeses hours in advance because their flavors are at their peak when they are first sliced! This makes a set of cheese knives perfect for serving a cheese plate.

The Cheese Knife: This knife is easily recognizable for its two sharp points at the end of a slightly bent blade.

The Grater & Special Knives: Cuts cheeses with hard rinds into thin slices and very small pieces.

The Wire Butter Knife: This knife is ideal to cut cheeses with a fragile texture.
