How to Keep Cheese Fresh
  • Padano wheelMost of the Italian cheeses are semi-soft to hard. They are best stored wrapped in cellophane and stored in the fridge.
  • A wheel of a hard cheese can be stored in a cellar, provided it is cool, and neither to damp or dry. Even a wheel of semi-soft cheese is best stored in the fridge.
  • A soft cheese, like gorgonzola can be wrapped in foil, allowing a small amount of moisture to escape.
